I love gnocchi and with this machine it is a snap.My aunt has one she bought 20 years ago and it still works great. Just make sure you follow the recipe included with the machine. Make sure you don't have sticky dough or I promise you will never want to try it again. I will be buying more of these to give to our daughters.

For 20 years I limped along, trying to make pasta with an extruder made by a long defunct company. With this motorized Atlas I can finally make noodles that aren't bunched together at both ends from slicing them off the extruder die, and don't congeal into lumps under the weight of the other noodles coming out of the machine. It's true that I can't make macaroni with this machine, but I couldn't really make macaroni with the extruder either. All I could make with the extruder were short cylindrical noodles with air pockets inside. The ends were always collapsed shut by my cutting them to length as they left the extruder die.
Using this machine, I soon developed a rhythm. First I passed a portion of dough through the flattening rollers on progressively tighter settings, until it was smooth and thin. As I did that, I also cut the prepared dough to the desired length of the pasta. Then I moved the motor to the cutting rollers I intended to use, and started passing the lengths of dough through those. I caught each batch of the cut pasta on a stick that came with the pasta drying stand, and with that I transferred the finished pasta to the drying stand.
I'm very pleased with this machine, and so is my husband, who has had to suffer through a number of unwise purchases of mine, such as that pasta extruder I bought 20 years ago.

I received this set for Christmas, but did not try it until today. IT IS AWESOME!
I had previously purchased a hand crank pasta machine from E-Bay, but it did not work well, so I returned it, and my husband insisted I spend the additional money to get a brand new, warrantied, MOTORIZED pasta machine. I think he grew weary of the "CLUNK!" of the handle falling out, followed by my exclamations of frustrations as I bent down to retrieve it every 10 seconds or so.
This machine gives you 10 (0-9) thicknesses, and the motor is simply superb. It is NOT "too slow," unless you are in some sort of pasta production race. The speed is JUST RIGHT, allowing you time to feed the dough into the machine at a steady pace. The thinnest level, '9', is about as thick as a sheet of printer paper. You can see your fingers through the dough. The many thicknesses allow you to simply mix the dough and go - NO KNEADING necessary.
The width of the rollers is 6 inches.
Marcato does make a 10 inch machine, but there are no additional cutters available for it beyond fettucini and tagliolini (a flat noodle about the width of spaghetti) .
I made a very basic dough of 1 cup all-purpose flour, and 3/4 cup water, mixing it by hand until it formed a cohesive lump, about 5 minutes, adding a few more tablespoons of water (about 3) gradually after the first couple of minutes. I did NOT let the dough rest. I just started at Level '0' on the pasta machine, cut the dough into 2 pieces, and started rolling it out.
The first 4-5 passes through level '0', I lightly floured the dough and then folded it into thirds before putting it into the machine again. You can see and feel the dough becoming smooth and satiny. Then I gradually increased the levels up to '5' just to clean the brand new machine of any possible oils and dust on the rollers. I then divided the dough in half, lightly dusted the cutters with flour, and used a section of dough in each cutter, moving the motor from the rollers to first the fettucini and then the tagliolini cutters. The noodles came out excellent. I then threw those pieces of dough away, as the instructions directed.
I repeated this process with the second half of the dough, but cut the dough in half at level '3' because it was getting quite long. I proceeded to levels '7' and '9', cut each piece in half again, and then made fettuccine with the level '7' pieces, and tagliolini with the level '9' pieces.
NOTE: Dust your dough as you put it through the rollers if it feels THE LEAST BIT STICKY. Also lightly dust your rollers and cutters before using. This will prevent sticking, and make clean up much easier.
When you use the fine tagliolini cutters, LET YOUR DOUGH DRY for about 5-10 minutes before cutting. This will help ensure that the noodles do not get stuck in the cutters.
The pasta cooked up wonderfully, taking about 4-5 minutes for the fettucini and only about 2 minutes for the tagliolini. Tossed with a bit of butter and a little salt on top, and it was a truly amazing meal for the pasta just being flour and water.
Tomorrow I am making ravioli and will be adding an egg for each cup of flour, and reducing the water to only a few tablespoons as needed for consistency. I can easily imagine using rice flour and making my own version of fresh ramen with this machine.
The experience and satisfaction of making "better than store bought" noodles is simply indescribable. You will truly enjoy this machine, and the results you will get from it.
